Can’t agree enough! I mainly identify as canto (through my mom’s side) and grew up in an Americanized Chinese restaurant. This is the food of my childhood alongside the more “authentic” canto dishes of steamed fish and lightly braised meats and veggies. What’s fun is that mom and I recently reminisced about all the dishes they served at their restaurant and soup belly makes the closest version of the walnut shrimp that I love and have looked for all these years.
